Quarantine Food Diary #1

Y’all, the consumption of food has shot up. My family of five is tiny but man, do we eat A LOT. Even my parents are stunned at the amount of food we consume on a weekly basis, haha.

All that to say that we have been eating goooood! I wish I did a better job documenting what we’ve had so far, but let’s just say we’ve been doing our part in helping out small businesses, hehe.

We had Snooze take-out on Sunday and man oh man, it was the perfect Sunday brunch meal to have! I had the habanero pork belly benedict with poached eggs and a side of hash browns - heavenly.



I made ramen! Not instant ramen (haha), but I gave my best shot at homemade ramen. I’d say it was actually pretty good! This is what I used:

+ Pork belly
+ Light soy sauce
+ Vegetable bouillon powder
+ Green onions
+ Ginger
+ Garlic
+ Bok choy
+ Boiled eggs
+ Rice wine/vinegar
+ Noodles (we used instant ramen noodles cause quarantine)


Here’s what I would do differently next time: use dark soy sauce instead of light soy sauce (hence why my broth looks so light), boil onions in the broth, and add more bok choy. There’s always next time and I can’t wait to improve this recipe!

We fell into the trend of the infamous Dalgona coffee and I’ll be the first to admit that it’s pretty good! Of course, if you’re looking for a quick coffee on the go this is not for you as it’s labor intensive, but if you’ve got time, try it out!
